Ingredients

  • 400g of asparagus
  • 1 teaspoon of salt
  • 3 eggs
  • 200g of bacon
  • 1 teaspoon of mustard
  • 80ml of cream
  • 1 teaspoon of parsley
  • 1 teaspoon of basil
  • 1 teaspoon of brown sugar
  • black pepper
  • fresh lettuce
  • 1 avocado

Step-by-Step Guide

  1. Take 400g of asparagus, wash it, and cut off the ends
  2. Boil 1 liter of water and add 1 teaspoon of salt to it
  3. Put the asparagus into the boiling water and cook for 2 minutes
  4. Take the asparagus out from the pan and put it in ice water for 3 minutes
  5. Boil 3 eggs
  6. Put asparagus on a paper towel and dry it with a clean towel
  7. Wrap asparagus in bacon and cook for 2 minutes on medium heat
  8. Smash the egg yolks and add 1 teaspoon of mustard, 40ml of cream, and mix everything
  9. Add another 40ml of cream, 1 teaspoon of parsley, 1 teaspoon of basil, and 1 teaspoon of brown sugar, and stir it
  10. Add some black pepper and mix everything together
  11. Serve the asparagus with some fresh lettuce, avocado, boiled egg whiles (leftovers from the eggs we used to make the sauce), and sauce

Tips

If you want to save your time and make the meal healthier, instead of frying, bake the asparagus in the oven for 10 minutes. If you are vegetarian or vegan, just cook the asparagus without bacon.
