120g quinoa
240ml water
240g flour
180g sugar
1,5 tsp baking powder
1/2 tsp salt
60g any berries
60ml olive oil
180ml milk
1 egg
vanillin
Step-by-Step Guide
Rinse the quinoa, put it in a saucepan, and pour 240 ml of water.
Bring the water to a boil, reduce the heat, cover and cook until all the water is absorbed and the quinoa is soft. (about 15 minutes).
Pool it down.
Prepare muffin molds.
Add the flour, berries, sugar, baking powder, salt, and vanillin to the quinoa. Mix.
In a smaller bowl, whisk together milk, egg, and olive oil.
Add the milk mixture to the flour mixture.
Stir until the dry ingredients are combined with the wet ingredients (do not whisk).
Divide the batter among the molds (12 pieces).
Bake at 180C or 355F for 25-30 minutes.
Tips
To get tender and airy cupcakes, mix the dry ingredients and liquids separately. The dry ingredients, i.e. flour, salt, and baking powder should be sifted.
