Ingredients

  • 210g of sugar cookies
  • 56g of butter
  • 420g of cream cheese
  • 105g of icing sugar
  • 140g of heavy cream
  • 2 eggs
  • ½ teaspoon of vanilla extract

Step-by-Step Guide

  1. Grind 210g of sugar cookies
  2. Mix the cookie powder with 56g of melted butter
  3. Create the base of your cheesecake in an 18cm baking pan
  4. Bake the base for 15 minutes at 180C or 356F
  5. Mix 420g of cream cheese with 2 eggs, 140g of heavy cream, 105g of icing sugar, and vanilla extract
  6. Pour the cheese filling into the base
  7. Put a baking pan filled with water underneath your cheesecake and bake it for 1 hour 20 minutes at 115C or 240F
  8. Refrigerate overnight
  9. Decorate with berries and fruits of your choice

Tips

Do not use a mixer or blender to combine the ingredients for the creamy filling. You want to carefully stir the filling without creating bubbles that may make your cheesecake crack.
