Ingredients

  • 3 eggplants
  • 2 tablespoons of lemon juice
  • 3 tablespoons of tahini
  • 3 garlic cloves
  • ⅓ cup of olive oil
  • ¼ cup of fresh parsley
  • Salt to taste

Step-by-Step Guide

  1. Wash 3 eggplants and put them into a baking pan
  2. Make little holes on the eggplants using a fork
  3. Bake the eggplants for 40 minutes at 220C or 425F
  4. Peel the eggplants and put them in a bowl
  5. Add 2 tablespoons of lemon juice, 3 tablespoons of tahini, 3 chopped garlic cloves, ⅓ cup of olive oil, ¼ cup of fresh finely cut parsley, some salt to taste, and mix everything together
  6. Serve your baba ghanoush with some toasted bread

Tips
