Ingredients

  • 4 tablespoons of olive oil
  • 2 tablespoons of butter
  • 1 teaspoon of sugar
  • Some salt to taste
  • 2 finely chopped garlic cloves
  • ½ cup of dry white wine
  • 8 cups of meat stock
  • 2 bay leaves
  • ½ teaspoon of thyme
  • Black pepper
  • 8 slices of baguette
  • Parmesan cheese

Step-by-Step Guide

  1. Preheat the pan and grease it with 3 tablespoons of olive oil
  2. Cut 3 pounds of onion and add it to the pan
  3. Add 1 tablespoon of olive oil, 2 tablespoons of butter, and fry the onion until it becomes golden brown
  4. Add 1 teaspoon of sugar, some salt to taste, 2 finely chopped garlic cloves, ½ cup of dry white wine, 8 cups of meat stock, 2 bay leaves, ½ teaspoon of thyme, mix everything together and cook for 30 minutes
  5. Add some salt and black pepper to taste and remove the soup from heat
  6. Cut 8 slices of baguette, put them in a baking pan, sprinkle some olive oil and parmesan cheese on top, and bake for 35 minutes at 175C or 350F
  7. Serve the soup with a slice of baked baguette on top
