Ingredients

  • Olive oil
  • 1 teaspoon of thyme
  • 1 teaspoon of paprika
  • 1 teaspoon of turmeric
  • 1 teaspoon of coriander
  • 1 teaspoon of cayenne pepper
  • 120g of sweet corn
  • 70g of carrot
  • 80g of peas
  • 200 ml of vegetable stock
  • 200 ml of soy cream

Step-by-Step Guide

  1. Preheat your pan and pour some olive oil into it
  2. Add 1 teaspoon of thyme, 1 teaspoon of paprika, 1 teaspoon of turmeric, 1 teaspoon of coriander, 1 teaspoon of cayenne pepper
  3. Stir the spices continuously to prevent burning them
  4. Add 120g of sweet corn, 70g of finely cut carrot, 80g of peas, and saute for 5 minutes
  5. Add 200 ml of vegetable stock, cover the pan with a lid and cook for 8 minutes
  6. Once the vegetables are cooked, add 200 ml of soy cream and thoroughly stir everything
  7. Cover the pan with a lid and cook the vegetables on medium heat for another 6 minutes
  8. Put the vegetables into 2 clay pots, add some broccoli and sprinkle with some vegan mozzarella cheese
  9. Grill the pots in the oven for 10 minutes at 200C or 390F

Tips

Try experimenting with other vegetables, add some mushrooms, pepper, onion, etc.
