Ingredients

  • 1 cup of quinoa
  • 1 teaspoon of olive oil
  • ½ teaspoon of salt
  • ½ of white onion
  • ½ of red pepper
  • 1 carrot
  • ½ courgette
  • 100g of cream cheese
  • Fresh parsley
  • Pepper to taste
  • ½ teaspoon of garlic powder
  • ½ teaspoon of thyme
  • 1 egg
  • 1 cucumber

Step-by-Step Guide

  1. Wash and drain 1 cup of quinoa
  2. Cook the quinoa on high heat until it becomes brown
  3. Add 1 teaspoon of olive oil, ½ teaspoon of salt and thoroughly mix everything
  4. Add 3 cups of water to the pan and cook the quinoa until the water reduces by half
  5. Cover the pan with a lid and cook for another 6-8 minutes
  6. Cut ½ of white onion, ½ of red pepper, 1 carrot, and ½ courgette
  7. Put 100g of cream cheese in a bowl, add some fresh parsley, pepper and salt to taste, and mix everything together
  8. Preheat the pan and pour some olive oil in it
  9. Saute the vegetables you cut before for a few minutes
  10. Add ½ teaspoon of garlic powder, ½ teaspoon of thyme, 1 teaspoon of salt, some pepper to taste, and saute for a few more minutes
  11. Mix quinoa with vegetables
  12. Cut 1 boiled egg and 1 cucumber in circles
  13. Assemble the tart in a baking ring
  14. Put some cream cheese sauce on the bottom, cover it with a layer of cucumbers, put the quinoa on top and gently press it
  15. Make another layer of cream cheese, put some quinoa on top, pres it and decorate with cucumber and boiled egg
  16. Remove the baking ring and serve your meal

Tips

Try to decorate your tart with some walnuts, they will make the top layers taste more prominent.
