Ingredients

  • Olive oil
  • 1 garlic clove
  • 1 onion
  • 1 red onion
  • Salt to taste
  • Pepper to taste
  • 100 ml of natural tomato paste
  • 250g of cooked lentil
  • 60g of grated carrot
  • Tortillas
  • Boiled chicken breast
  • Guacamole sauce
  • Grated cheese
  • Fried onion

Step-by-Step Guide

  1. Preheat your frying pan and pour some olive oil in it
  2. Add 1 finely chopped garlic clove, 1 diced onion, and saute it for 2 minutes
  3. Add 1 diced red pepper, thoroughly mix everything together, and season it with some black pepper and salt to taste
  4. Pour 100 ml of natural tomato paste, stir, and cook on medium heat for 3 minutes
  5. Add 250g of cooked lentil, 60g of grated carrot, mix everything and cook for 8 minutes
  6. Put the stuffing on a tortilla, add some boiled chicken breast, guacamole sauce, grated cheese, fried onion, and wrap your burrito
  7. Repeat this step for the remaining ingredients
  8. Preheat the pan to 200C or 390F and grill the burritos for 2 minutes on each side to make them crispy
  9. Sprinkle some grated cheese on top, cover the pan with a lid, and cook for another 5 minutes
  10. Serve your burritos with some fresh parsley on top

Tips

Grill your burritos in the oven for 10 minutes instead of frying them to make them less greasy.
