Ingredients

  • 600g of chicken
  • Salt to taste
  • Olive oil
  • 1 diced onion
  • 1 chopped garlic clove
  • ½ of chopped red pepper
  • 180ml of beer
  • 200ml of chicken stock
  • 180ml of cream
  • Black pepper to taste
  • ½ teaspoon of thyme
  • ½ teaspoon of dried bay leaf
  • 1 tablespoon of sugar
  • 200g of mushrooms
  • Fresh parsley
  • Rice

Step-by-Step Guide

  1. Take 600g of chicken and cut it into pieces
  2. Sprinkle the chicken with some salt
  3. Preheat the pan and pour some olive oil into the pan
  4. Fry the chicken on both sides until it becomes crispy
  5. Bake the chicken in the oven at 180C or 355F for 15 minutes
  6. Pour some olive oil in the pan, add 1 diced onion, 1 chopped garlic clove, ½ of chopped red pepper, and saute for a few minutes
  7. Add some salt to taste, add 180ml of beer, and cook for about 10 minutes until the alcohol evaporates
  8. Add 200ml of chicken stock, 180ml of cream, black pepper to taste, ½ teaspoon of thyme, ½ teaspoon of dried bay leaf, 1 tablespoon of sugar, and cook for 20 minutes
  9. Fry 200g of mushrooms for a few minutes
  10. Add the sauce to the mushrooms, stir, and add the chicken
  11. Sprinkle with some fresh parsley and bake at 180C or 355F for 5 minutes
  12. Serve the fricassee with rice

Tips

If you do not like bones, you can use boneless chicken.
